Flours

Our flours are never bleached or bromated and never contain any unnecessary additives.

  • Bread Flour

    Made from stone milled hard red spring wheat, with a high protein content. Best used for breads, pizza crust, bagels and other products needing a high protein content.

  • Whole Wheat Bread Flour

    Made from stone milled hard red spring wheat, with a high protein content. This is the same as our bread flour but is a whole grain flour that doesn’t sift out any of the bran. Use it for higher nutrition and heartier baked goods.

  • All-purpose Flour

    Made from a blend of stone milled wheats to achieve a consistent protein content of between 10 and 11%. Great for yeasted breads, quick breads, cookies, and scones.

  • Whole Wheat All-purpose Flour

    This is the same blend as our all-purpose flour, but is a whole grain version that doesn’t sift out the bran. This whole wheat flour offers a rich, nutty flavor for yeasted breads, quick breads, cookies, and scones. Use it on its own or substitute a portion of regular all-purpose flour to add flavor and complexity to your recipes.

  • Whole Grain Rye Flour

    Single varietal winter rye flour. Best for dense, fruity sourdoughs or blended with wheat flour to add flavor to artisanal breads. Try this flour in your favorite chocolate brownie recipe for a moist, fudgy texture!

  • Milestone Mill Pastry Flour
    Pastry Flour

    Mild flavored single varietal pastry flour made from soft white Medina wheat, a variety developed by Cornell for New York State farmers. This flour produces beautifully fluffy cakes. Try it in a chiffon cake or angel food cake with fresh, local berries or whipped cream. 


Corn

Our corn products start with organic heirloom corn that’s stone-milled to preserve its flavor and nutrition, and don’t contain any preservatives. 

  • Corn Meal

    Excellent for aromatic, flavor-filled corn breads, muffins, and cakes.

  • Corn Tortillas

    Earthy and complex flavor, made with organic corn grown in the Hudson Valley and using a traditional nixtamalization process to unlock the corn’s nutrients.

  • Tortilla Chips

    Just the right amount of thickness, crunch, and salt. Made with organic corn grown in the Hudson Valley and our nixtamal corn tortillas. These chips will stand up to your chunkiest salsas and seven-layer bean dips!

  • Popcorn

    Organically grown, non-GMO, corn in the Hudson Valley. Use your favorite popping method for a delicious and healthy, whole grain, snack.

Beans

Dry beans take a little extra time to cook, but they have a great taste and texture you won’t find in a can.

  • Black Beans

    Organically grown in the Hudson Valley. Great source of plant-based protein with a mild and smooth flavor. Try it in tacos or a hearty black bean soup.

  • Pinto Beans

    Organically grown in the Hudson Valley. Earthy in flavor with a naturally creamy texture. Great for refried beans or added to chili and soups.
